    • First Sulphitation: Raw juice is continuously limed and treated with SO2 gas in a reaction tank, forming insoluble calcium sulphite which helps remove colloidal impurities.
    • Second Sulphitation: Un-sulphured syrup from the evaporator is again sulphited (sometimes called syrup sulphitation) to achieve better color and clarity.
